Introduction

Known from the TV program Suomalainen menestysresepti (“The Finnish Success Recipe”), Våffelrakan represents the finest of Åland’s food craftsmanship. At the market, they serve potato waffles fried in plenty of Åland butter and topped with seasonal accompaniments such as whitefish roe, onion, crème fraîche, and chives.
