Hannu Hellsten, third generation fisher follows in the footsteps of his father and grandfather before him. As a rule, the Baltic herring catch is processed into pickled herring based on his mother’s and father’s recipes. Hellsten is a familiar face at Helsinki Baltic Herring Market. The Tyrske boat is laden with salted Baltic herring, pickled Baltic herring, Baltic herring marinated in mustard sauce, pickled herring, Baltic herring marinated in garlic, and archipelago bread.
