Hannu Hellsten

Introduction

Third-generation professional fisherman Hannu Hellsten is a familiar sight at the Helsinki Herring Market. Hannu’s herring catch is processed into seasoned herring using his father’s and mother’s recipes. From his boat Tyrske, he sells salted herring, seasoned fish, mustard herring, “shoemaker’s salmon” (marinated herring), garlic herring, and archipelago bread.
